Ingredients:

  • 2 cups Frozen Pineapple Chunks
  • 4 fl oz Light/White Rum
  • 3 fl oz Cream of Coconut
  • 1 fl oz Fresh Pineapple Juice
  • 5 fl oz Fresh Lime Juice
  • 1/2 cup Ice (if needed)
  • Pineapple wedges (for Garnish)
  • Maraschino cherries (for Garnish)

Instructions:

  1. Preparation: Place your serving glasses (Hurricane or Poco Grande) in the freezer for at least 5 minutes. Cold glasses keep the drink colder longer.
  2. Measure Accurately: Measure all liquid ingredients (Rum, Cream of Coconut, Pineapple Juice, Lime Juice) precisely before blending.
  3. Combine Liquid Base: Pour the measured Cream of Coconut, Rum, Pineapple Juice, and Lime Juice into the blender jar first. Pulse the liquid ingredients 2-3 times to combine thoroughly and emulsify the coconut cream.
  4. Add Frozen Ingredients: Introduce the 2 cups of frozen pineapple chunks and the 1/2 cup of ice (only use ice if your pineapple wasn't fully frozen).
  5. Blend to Perfection: Start blending on a low speed, gradually increasing to high power. Blend until the mixture is thick, homogenous, and has a velvety, milkshake-like consistency (approx. 60-90 seconds). Stop the blender immediately once smooth to prevent unnecessary melting.
  6. Pour and Garnish: Pour the mixture immediately into the chilled glasses. Garnish each serving with a fresh pineapple wedge notched onto the rim and a maraschino cherry. Serve with a straw.
