Ingredients:

  • 1.5 lbs ground beef (80/20 ground chuck)
  • 1.5 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 0.5 tsp garlic powder
  • 1 tbsp neutral oil or butter
  • 1 tsp Worcestershire sauce
  • 0.5 tsp smoked paprika

Instructions:

  1. Ensure the ground beef is very cold to keep the fat from melting during handling.
  2. Gently divide the beef into four equal portions (approximately 6 oz each), handling the meat as little as possible.
  3. Shape each portion into a disc about 1 inch thick and slightly wider than the bun.
  4. Use your thumb to create a shallow dimple in the center of each patty to prevent doming during cooking.
  5. Season the exterior of the patties generously with salt, pepper, and optional spices only seconds before cooking.
  6. Heat a cast iron skillet or grill to high heat. Add oil or butter to the pan.
  7. Place patties in the pan and sear for 4–5 minutes per side until the internal temperature reaches 135°F for medium-rare or 160°F for well-done.
  8. Transfer patties to a warm plate and let rest for 3–5 minutes before serving.
