Ingredients:

  • 1 lb fresh green beans, trimmed
  • 2 tbsp extra virgin olive oil
  • 4 strips thick-cut bacon, diced into 1/2-inch pieces
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/3 cup freshly grated parmesan cheese

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Rinse the green beans and pat them completely dry with a clean kitchen towel to ensure a crispy texture.
  3. In a large mixing bowl, toss the dried green beans with extra virgin olive oil, garlic powder, kosher salt, and black pepper until every bean is evenly coated.
  4. Spread the seasoned beans in a single layer on the prepared baking sheet. Scatter the diced raw bacon pieces evenly over the beans.
  5. Roast in the oven for 10 minutes, or until the beans are tender-crisp with charred edges and the bacon begins to sizzle.
  6. Remove from the oven, toss the beans to coat in bacon fat. Sprinkle the finely grated parmesan cheese over the top, and return to the oven for 5 minutes until the cheese is melted and golden.
