- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp dried oregano
- 1 pinch cayenne pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or foil.
- Pat the chicken thighs bone-dry on both sides using paper towels to ensure proper browning and trim any excessive hanging fat.
- In a small bowl, whisk together the sea salt, black pepper, smoked paprika, garlic powder, onion powder, and oregano.
- Place the chicken in a large bowl, drizzle with olive oil, and toss to coat. Sprinkle the spice mixture evenly over the chicken, ensuring you season inside the folds.
- Arrange the thighs on the baking sheet with at least one inch of space between pieces. Bake for 20 to 25 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and allow the meat to rest for 5 minutes before serving to reabsorb juices.
