Ingredients:

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp dried oregano
  • 1 pinch cayenne pepper

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or foil.
  2. Pat the chicken thighs bone-dry on both sides using paper towels to ensure proper browning and trim any excessive hanging fat.
  3. In a small bowl, whisk together the sea salt, black pepper, smoked paprika, garlic powder, onion powder, and oregano.
  4. Place the chicken in a large bowl, drizzle with olive oil, and toss to coat. Sprinkle the spice mixture evenly over the chicken, ensuring you season inside the folds.
  5. Arrange the thighs on the baking sheet with at least one inch of space between pieces. Bake for 20 to 25 minutes or until the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and allow the meat to rest for 5 minutes before serving to reabsorb juices.
