Instructions:
- In a large, cold pot, combine the 2 lb ground beef, 4 cups of beef broth/water, and the finely minced onion. Do not pre-brown the beef.
- Place the pot over medium-high heat. Using a potato masher or whisk, aggressively break up the raw beef continuously as the liquid heats up until it forms a super-fine, sauce-like consistency, ensuring no large clumps remain. Bring the mixture to a boil.
- Once boiling, stir in the tomato sauce, chili powder, cocoa powder, cinnamon, allspice, clove, garlic powder, bay leaves, salt, and pepper. Reduce the heat immediately to low and allow the mixture to simmer, uncovered, for 60 minutes. Stir occasionally to prevent sticking.
- After 60 minutes, remove and discard the bay leaves. Stir in the 3 Tbsp apple cider vinegar and 3 Tbsp Worcestershire sauce. Skim any excess rendered fat from the surface if desired.
