Taco Cupcakes
Ingredients:
– 1 lb ground beef
– 1 packet taco seasoning
– 1 cup salsa
– 1 can (16 oz) refried beans
– 2 cups shredded cheddar cheese
– 24 wonton wrappers
– Optional toppings: sour cream, sliced jalapeños, diced tomatoes, chopped cilantro
Directions:
1. Preheat the oven:
– Preheat your oven to 375°F (190°C).
2. Cook the beef:
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
– Add the taco seasoning and salsa to the skillet. Stir to combine and cook for another 2-3 minutes. Remove from heat.
3. Assemble the cupcakes:
– Spray a muffin tin with cooking spray.
– Place one wonton wrapper into each muffin cup, pressing it down to form a cup shape.
– Spoon a small amount of refried beans into the bottom of each wonton cup.
– Add a layer of the seasoned ground beef mixture.
– Sprinkle shredded cheddar cheese on top.
– Add another wonton wrapper on top and repeat the layers: refried beans, ground beef, and cheese.
4. Bake the cupcakes:
– Bake in the preheated oven for 15-20 minutes, or until the wonton wrappers are golden brown and crispy.
– Remove from the oven and let cool slightly before removing from the muffin tin.
5. Garnish and serve:
– Top each taco cupcake with your favorite toppings, such as sour cream, sliced jalapeños, diced tomatoes, and chopped cilantro.
– Serve warm and enjoy!
