Texas Sheet Cake Cookies
Ingredients:
1/2 cup unsalted butter
1/3 cup granulated sugar
1/3 cup unsweetened cocoa powder
1 egg, beaten
1/2 teaspoon vanilla extract
1 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup buttermilk
1/2 cup chopped pecans (optional)
For the icing:
1/4 cup unsalted butter
2 tablespoons cocoa powder
3 tablespoons milk
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C).
In a medium saucepan, melt 1/2 cup butter. Stir in granulated sugar and 1/3 cup cocoa powder, remove from heat.
Add egg and 1/2 teaspoon vanilla, mixing well.
Combine flour, salt, and baking powder; stir into cocoa mixture alternately with buttermilk.
Drop by teaspoonfuls onto lined baking sheets. Bake for 8-10 minutes.
For the icing, combine 1/4 cup butter, 2 tablespoons cocoa, and milk in a small saucepan. Bring to a boil; remove from heat.
Stir in powdered sugar and 1/2 teaspoon vanilla until smooth.
Spread icing on warm cookies and sprinkle with chopped pecans if desired.
