Savory French Onion Beef Sausage Rolls

Ingredients:

Filling:

1 lb ground beef
1 tablespoon olive oil
2 large onions, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
Salt and pepper to taste
1/4 cup beef broth
2 sheets puff pastry, thawed
1 egg, beaten for egg wash
Directions:

In a skillet over medium heat, add olive oil and cook onions until soft and golden. Add garlic, thyme, salt, and pepper, cooking for an additional 2 minutes. Pour in beef broth and simmer until completely evaporated. Let the mixture cool.
Preheat the oven to 400°F (200°C). In a bowl, combine the ground beef and cooled onion mixture.
Cut each sheet of puff pastry in half. Place a quarter of the beef and onion mixture along one edge of each pastry half. Roll pastry over the filling, sealing the edges with a fork.
Place rolls seam-side down on a baking sheet lined with parchment paper. Brush with beaten egg.
Bake for 20-25 minutes, or until pastry is puffed and golden brown. Serve warm.
