Chocolate-Dipped Strawberry Garnish Cupcakes
Ingredients:
1 and 3/4 cups all-purpose flour
1 cup granulated sugar
3/4 cup cocoa powder
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1/2 cup strawberry jam, seedless
Fresh strawberries, whole for garnish
Melted chocolate for dipping
Directions:
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla to flour mixture and mix until well combined.
Stir in boiling water (batter will be thin). Pour batter into cupcake liners until they are half full.
Drop a teaspoon of strawberry jam into the center of each cupcake.
Bake for 20-22 minutes, or until a toothpick comes out clean.
Once cooled, dip whole strawberries in melted chocolate and set them on parchment paper to harden.
Place a chocolate-dipped strawberry on top of each cupcake before serving.
