Strawberry Cheesecake Cupcakes 

📋 Ingredients:

12 vanilla wafer cookies
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup strawberry preserves or jam
Fresh strawberries, for garnish (optional)

📝 Instructions:

1️⃣ Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
2️⃣ Place a vanilla wafer cookie at the bottom of each paper liner.
3️⃣ In a mixing bowl, beat cream cheese and sugar until smooth.
4️⃣ Add eggs one at a time, beating well after each addition.
5️⃣ Stir in vanilla extract.
6️⃣ Spoon cream cheese mixture over the vanilla wafer cookies in the muffin tin, filling each liner about 3/4 full.
7️⃣ Drop small spoonfuls of strawberry preserves or jam onto the top of each cupcake.
8️⃣ Use a toothpick to swirl the strawberry preserves into the cream cheese mixture.
9️⃣ Bake for 20-25 minutes, or until the cupcakes are set and slightly golden around the edges.
🔟 Remove from oven and let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
1️⃣1️⃣ Once cooled, refrigerate for at least 2 hours before serving.
