Strawberry Cheesecake Cupcakes
Ingredients:
12 vanilla wafer cookies
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup strawberry preserves or jam
Fresh strawberries, for garnish (optional)
Instructions:
Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
Place a vanilla wafer cookie at the bottom of each paper liner.
In a mixing bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, beating well after each addition.
Stir in vanilla extract.
Spoon cream cheese mixture over the vanilla wafer cookies in the muffin tin, filling each liner about 3/4 full.
Drop small spoonfuls of strawberry preserves or jam onto the top of each cupcake.
Use a toothpick to swirl the strawberry preserves into the cream cheese mixture.
Bake for 20-25 minutes, or until the cupcakes are set and slightly golden around the edges.
Remove from oven and let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
Once cooled, refrigerate for at least 2 hours before serving.
Garnish with fresh strawberries before serving if desired. Enjoy these delightful strawberry cheesecake cupcakes!

You can use any flavor of preserves or jam for variety.
For a festive touch, top with whipped cream or a dollop of additional preserves before serving.
