Ingredients:
For the Oreo Crust:
24 Oreo cookies, finely crushed
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
3 (8-ounce) packages cream cheese, room temperature
1 cup granulated sugar
3/4 cup sour cream
1/3 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
3 large eggs
1 cup cherry pie filling
For the Ganache Topping:
2/3 cup heavy cream
6 ounces semi-sweet chocolate, chopped
For Garnish:
Fresh raspberries
Chocolate shavings
Directions:
Preheat oven to 350°F (175°C). Combine crushed Oreo cookies and melted butter. Press into the bottom of a 9-inch springform pan.
In a large bowl, mix cream cheese and sugar until smooth. Add sour cream, cocoa powder, and vanilla. Beat in eggs one at a time. Fold in cherry pie filling. Pour over crust.
Bake for 50-55 minutes or until set. Cool completely.
For ganache, heat cream until simmering and pour over chocolate. Let sit for 1 minute, then stir until smooth. Pour over cooled cheesecake.
Refrigerate for at least 4 hours. Garnish with fresh raspberries and chocolate shavings before serving.
