Cheesy Potato Burritos
Ingredients:
• 2 large russet potatoes, peeled and diced
• 1 tbsp olive oil
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1 cup shredded cheddar cheese
• 1/2 cup sour cream
• 1/4 cup chopped green onions
• 4 large flour tortillas

Optional: Salsa, guacamole, or hot sauce for serving
Instructions:
1. Cook Potatoes: Preheat oven to 425°F (220°C). Toss the diced potatoes with olive oil, salt, pepper, paprika, garlic powder, and onion powder. Spread evenly on a baking sheet and bake for 25-30 minutes, or until golden and crispy.
2. Prepare Filling: In a large bowl, combine the cooked potatoes, shredded cheddar cheese, sour cream, and chopped green onions. Mix until well combined.
3. Assemble Burritos: Warm the flour tortillas in a dry skillet or microwave until pliable. Spoon an even amount of the potato mixture onto each tortilla. Roll up the burritos by folding in the sides and then rolling them up from the bottom.
4. Optional: Toast Burritos: For a crispy exterior, lightly spray a skillet with cooking spray and toast the burritos over medium heat until golden brown on all sides.
5. Serve: Serve the Cheesy Potato Burritos with salsa, guacamole, or hot sauce, if desired
