Microwave Baked Potato
Ingredients:
1 large (10 to 12-ounce) russet potato
1 teaspoon olive oil (optional)
Pinch of kosher salt (optional)
Optional Toppings:
1 tablespoon butter
1/4 cup shredded cheddar cheese
1 tablespoon sour cream
1 teaspoon minced chives
Salt and pepper, to taste
Instructions:
Prepare the Potato: Scrub the potato well and poke it a few times with a fork.
Microwave: Place on a microwave-safe plate and microwave for 8-12 minutes, flipping once halfway through.
Crisp the Skin (Optional): Coat with olive oil, sprinkle with salt, and bake at 450°F for 10 minutes.
Serve: Slice open, add toppings, and season to taste.
