Decadent Chocolate-Strawberry Fusion Cheesecake
For the Crust:
1 and 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
3/4 cup sour cream
1/4 cup heavy cream
4 large eggs
1 teaspoon vanilla extract
1/2 cup strawberry puree
For the Ganache:
6 oz semi-sweet chocolate, chopped
1/2 cup heavy cream
For the Topping:
Fresh strawberries, halved
Chocolate curls or shavings
Directions:
Prepare the Crust: Preheat oven to 325°F (163°C). Mix graham crumbs, sugar, and butter; press into a 9-inch springform pan.
Make the Filling: Blend cream cheese and sugar. Add sour cream, cream, eggs, and vanilla. Divide the batter, mix strawberry puree into half, layer over plain batter in the pan.
Bake: Set pan in a water bath, bake for 70 minutes. Turn off the oven, rest the cake inside for 30 minutes. Cool and chill overnight.
Ganache Topping: Melt chocolate into hot cream, whisk, and pour over the chilled cheesecake. Add strawberries and chocolate shavings.
