Skillet Cacio e Pepe Tortellini with Wilted Greens
Ingredients
2 tablespoons olive oil
1/4 cup finely grated Parmesan cheese
1/4 cup finely grated Pecorino Romano cheese
1 teaspoon freshly ground black pepper
1 package (9 ounces) cheese tortellini
3 cups baby spinach or other tender greens
Salt, to taste
Instructions
Cook Tortellini:
Boil tortellini according to package instructions and drain.
Prepare Sauce:
Heat oil in a skillet, add pepper, and toast for 1 minute.
Add cooked tortellini and cheeses, stirring until cheese melts and coats tortellini.
Add Greens:
Stir in spinach until wilted.
Season with salt to taste and serve immediately.
