Salmon Tacos with Mango Salsa
Ingredients:
1 lb salmon fillets, skin removed
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper, to taste
8 small flour or corn tortillas
1 ripe mango, peeled, pitted, and diced
1/2 red onion, finely chopped
1/2 red bell pepper, diced
1 jalapeño pepper, seeded and minced
Juice of 1 lime
2 tablespoons chopped fresh cilantro
Salt and pepper, to taste
Optional toppings: shredded lettuce, diced avocado, sour cream, hot sauce
Directions:
In a small bowl, mix together the olive oil, chili powder, cumin, paprika, salt, and pepper.
Rub the spice mixture evenly over the salmon fillets.
Place the salmon fillets on the grill and cook for 4-5 minutes per side, or until the fish flakes easily with a fork.
Remove the salmon from the grill and let it rest for a few minutes before flaking it into bite-sized pieces.
While the salmon is cooking, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño pepper, lime juice, cilantro, salt, and pepper. Mix well to combine.
Warm the tortillas on the grill for about 30 seconds per side, or until they are heated through and slightly charred.
To assemble the tacos, place a few pieces of flaked salmon onto each tortilla, then top with a spoonful of mango salsa and any optional toppings of your choice.
