Giant Quesadilla Big Mac
Ingredients:
1 pound ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup finely chopped onion
1/4 cup finely chopped pickles
2 tablespoons Thousand Island dressing
4 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded lettuce
1 cup diced tomatoes
Cooking spray
Instructions:
In a large skillet over medium heat, cook the ground beef, salt, black pepper, garlic powder, and onion powder until the beef is browned and cooked through. Drain any excess fat.
Stir in the finely chopped onion, pickles, and Thousand Island dressing. Cook for an additional 2 minutes, then remove from heat.
Preheat a large skillet or griddle over medium heat and lightly coat with cooking spray.
Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheddar cheese evenly over the tortilla.
Spread half of the ground beef mixture over the cheese, then top with another 1/2 cup of shredded cheddar cheese.
Place a second flour tortilla on top and press down gently. Cook for 2-3 minutes or until the bottom tortilla is golden and crispy, then carefully flip the quesadilla.
Cook the other side for another 2-3 minutes until golden and crispy. Remove from the skillet and set aside. Repeat steps 4-7 to make the second quesadilla.
Let the quesadillas cool for a minute, then carefully lift the top tortilla and sprinkle half of the shredded lettuce and diced tomatoes over the beef mixture. Replace the top tortilla and slice the quesadilla into wedges.
Serve warm with additional Thousand Island dressing for dipping.

Notes:
Add sliced jalapeños for a spicy kick.
Substitute ground beef with ground turkey or chicken for a lighter option.
