Shrimp Taco Bites
Ingredients:
24 small round tortilla chips
24 small cooked shrimp, peeled and deveined
1 cup finely shredded cabbage
1/2 cup diced tomatoes
1/4 cup finely chopped red onion
1/2 cup sour cream
1/4 cup chopped fresh cilantro
1 lime, juiced
1/2 teaspoon garlic powder
Salt and pepper to taste
Directions:
In a small bowl, mix together sour cream, cilantro, lime juice, garlic powder, salt, and pepper to create the cilantro cream sauce.
Arrange tortilla chips on a serving platter.
Top each chip with a small amount of shredded cabbage.
Place one shrimp on top of the cabbage on each chip.
Add a few pieces of diced tomato and red onion on top of the shrimp.
Drizzle each assembled taco bite with cilantro cream sauce.
Serve immediately, garnished with extra cilantro if desired.
