Ingredients:
– 16 oz cream cheese, softened
– 1/2 cup unsalted butter, softened
– 1 cup all-purpose flour
– 3 large eggs
– 1/2 cup heavy whipping cream
– 2/3 cup mini semisweet chocolate chips
– 15 regular Oreo cookies, crushed
– 1/2 cup granulated sugar
– 2 tsp cornstarch
– 1 tsp vanilla extract
– Pinch of salt
– 1 cup semisweet chocolate chips
– 1/2 tsp salt
– Blue gel food coloring (optional)
– 1/3 cup packed brown sugar
Instructions:

1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
2. In a bowl, cream together butter, brown sugar, and salt. Add egg and vanilla, then mix in flour and chocolate chips. Press into the bottom of the pan.
3. Beat cream cheese, sugar, cornstarch, and salt until smooth. Incorporate heavy cream, eggs, and crushed Oreos. Pour over the cookie crust.
4. Bake for 50-60 minutes until the center is just set, then cool in the oven with the door ajar.
5. Prepare ganache by heating cream and pouring it over chocolate chips. Stir until smooth, then drizzle over the cooled cheesecake. Refrigerate for at least 4 hours before serving.
