Mango Sticky Rice Pudding Tower: A Tropical Delight
Indulge in the creamy sweetness of coconut and luscious mango with this delightful dessert that’ll transport you to a tropical paradise!
Ingredients:
– 200g glutinous rice
– 400 ml coconut milk (divided)
– 100g granulated sugar (divided)
– 2 large ripe mangoes, diced
– 1 tbsp toasted sesame seeds
– 1/2 tsp salt
– 1 tbsp cornstarch, dissolved in 2 tbsp water
– Fresh mint leaves for garnish
Instructions:

1. Rinse and soak the glutinous rice for at least 2 hours. Combine with 400 ml coconut milk, sugar, and salt in a pot. Boil, then simmer covered for 20 minutes until tender.
2. In a saucepan, mix the remaining coconut milk, sugar, salt, and bring to a simmer. Stir in the dissolved cornstarch until the sauce thickens.
3. Firmly layer the cooked rice in a small bowl or mold, then unmold onto a plate. Top with diced mangoes.
4. Drizzle warm coconut sauce over the mango and rice, then sprinkle with sesame seeds and garnish with mint leaves.
