With just a few ingredients, you can make these delightful candies at home and enjoy their perfect balance of heat and sweetness. Great for gifting or satisfying your own sweet tooth, this candy is sure to become a new favorite!
 Ingredients:
• 2 cups granulated sugar
• 1 cup light corn syrup
• 1/2 cup water
• 1/2 to 1 tsp cinnamon oil (adjust based on desired spiciness)
• 1/2 tsp red food coloring (optional, for that classic cinnamon candy look)
• 1/4 cup powdered sugar (for dusting)
• 1/4 cup cornstarch (for dusting)
 Directions:
1. Prepare the Candy Mold:

o Line a baking sheet with parchment paper or lightly grease it with non-stick spray. If using candy molds, lightly grease the molds to prevent sticking. In a small bowl, mix together the powdered sugar and cornstarch for dusting. Set aside.
2. Make the Candy Base:
o In a large, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir over medium heat until the sugar dissolves completely.
o Once the sugar is dissolved, stop stirring and attach a candy thermometer to the side of the pan. Increase the heat to medium-high and bring the mixture to a boil.
3. Cook to Hard Crack Stage:
o Allow the mixture to boil without stirring until it reaches 300°F (150°C) on the candy thermometer, which is known as the hard crack stage. This will take about 10-15 minutes. Be careful not to let the mixture brown or burn.
4. Add the Cinnamon Flavoring:
o Once the mixture reaches 300°F, immediately remove it from the heat. Add the cinnamon oil and red food coloring (if using), and stir quickly to combine. Be cautious as the cinnamon oil may cause the mixture to steam.
5. Pour and Set the Candy:
o Carefully pour the hot candy mixture onto the prepared baking sheet or into the greased candy molds. If pouring onto a sheet, let it spread evenly. Allow the candy to cool completely at room temperature.
6. Break and Dust the Candy:
o Once the candy has hardened, use a knife or mallet to break it into small, bite-sized pieces. If using molds, simply pop the candies out.
o Toss the broken candy pieces in the powdered sugar and cornstarch mixture to prevent sticking and to give them a classic, frosted appearance.
7. Store and Enjoy:
o Store the cinnamon candy in an airtight container at room temperature for up to 2 weeks. Enjoy the spicy-sweet treats whenever you’re craving a bit of old-fashioned flavor!
