Ingredients:
• 2 1/2 cups all-purpose flour
• 2 1/2 tsp baking powder
• 1/2 tsp salt
• 1 cup unsalted butter, softened
• 1 3/4 cups granulated sugar
• 4 large eggs
• 1 tsp vanilla extract
• 1 tsp peppermint extract
• 1 cup whole milk
• 1 cup white chocolate chips, melted and cooled
• Green food coloring (optional)
For the Frosting:
• 1 cup unsalted butter, softened
• 4 cups powdered sugar
• 1 tsp vanilla extract
• 1/2 tsp peppermint extract
• 1/4 cup heavy cream
• White chocolate shavings and mint leaves for garnish
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
4. Mix in the vanilla and peppermint extracts.
5. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
6. Stir in the melted white chocolate and green food coloring (if using).
7. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool the cakes in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
9. For the frosting, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth.
10. Mix in the vanilla and peppermint extracts. Add the heavy cream and beat until fluffy.
