Avocado Lime Cheesecake

Ingredients:
Crust:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/3 cup unsalted butter, melted
Cheesecake Filling:
• 16 oz cream cheese, softened
• 1 cup granulated sugar
• 2 large ripe avocados, peeled and pitted
• 1/2 cup sour cream
• 1/4 cup lime juice (freshly squeezed)
• Zest of 2 limes
• 2 large eggs
• 1 tsp vanilla extract

Directions:
1. Prepare the Crust: Preheat the oven to 325°F (163°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture firmly into the bottom of a greased 9-inch springform pan. Bake for 8-10 minutes until golden and set. Let it cool while you prepare the filling.
2. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the avocados, sour cream, lime juice, and lime zest, and beat until well blended and smooth. Add the eggs one at a time, mixing on low speed until just combined. Stir in the vanilla extract.
