 These Cranberry Pistachio White Chocolate Truffles are a delightful combination of creamy white chocolate, tangy dried cranberries, and crunchy pistachios! These festive truffles are perfect for the holidays or as a homemade gift for someone special. Each bite is rich, smooth, and bursting with flavors, making them irresistible! 
 Ingredients:
• 8 oz white chocolate, chopped (or white chocolate chips)
• 1/4 cup heavy cream
• 1/4 cup unsalted butter, cubed
• 1/2 tsp vanilla extract
• 1/3 cup dried cranberries, finely chopped
• 1/3 cup pistachios, finely chopped (plus extra for rolling)
• 1/4 cup powdered sugar (for rolling, optional)
 Directions:
1. Melt the White Chocolate:

o Place the chopped white chocolate and cubed unsalted butter in a heatproof bowl.
o In a small saucepan over medium heat, heat the heavy cream until it just begins to simmer (do not boil). Pour the hot cream over the white chocolate and butter. Let it sit for 2 minutes, then stir until smooth and fully melted. If needed, microwave the mixture in 15-second intervals, stirring in between, until completely smooth.
2. Add the Flavorings:
o Stir in the vanilla extract, finely chopped dried cranberries, and 1/3 cup of finely chopped pistachios. Mix until well combined.
3. Chill the Mixture:
o Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until the mixture is firm enough to scoop.
4. Shape the Truffles:
o Line a baking sheet with parchment paper.
o Using a small cookie scoop or spoon, scoop out about 1 tablespoon of the chilled mixture and roll it between your palms to form a smooth ball. Place the truffle balls onto the prepared baking sheet.
5. Roll in Pistachios or Powdered Sugar:
o Roll each truffle in the extra chopped pistachios or powdered sugar to coat evenly, gently pressing to adhere. You can also mix and match for a beautiful presentation!
6. Chill and Serve:
o Once all the truffles are coated, return them to the refrigerator for another 30 minutes to firm up before serving.
