Shrimp and Broccoli Stir Fry in Garlic Sauce

Ingredients:
• 1 lb large shrimp, peeled and deveined
• 3 cups broccoli florets
• 3 tbsp vegetable oil, divided
• 4 cloves garlic, minced
• 1 tbsp fresh ginger, minced
• ¼ cup low-sodium soy sauce
• 2 tbsp oyster sauce
• 1 tbsp honey
• 2 tsp cornstarch mixed with 2 tbsp water (for thickening)
• 1 tsp sesame oil
• ¼ cup water
Directions:
1. Prepare the shrimp: Season the shrimp with a pinch of salt and pepper. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove from the pan and set aside.
2. Stir fry the broccoli: In the same pan, add another tablespoon of oil and stir fry the broccoli florets for 3-4 minutes, adding a splash of water to steam and soften the broccoli. Remove and set aside.
3. Make the garlic sauce: Add the remaining oil to the pan, followed by the minced garlic and ginger. Stir fry for 30 seconds until fragrant. Add the soy sauce, oyster sauce, honey, and water. Bring the mixture to a simmer.
4. Thicken the sauce: Stir the cornstarch slurry into the sauce and cook for 1-2 minutes until the sauce thickens.
5. Combine: Add the shrimp and broccoli back into the pan, tossing them in the garlic sauce until everything is well coated. Drizzle with sesame oil for extra flavor.
