Perfectly Baked Homemade Calzone
Ingredients:
For the Dough:
2 1/4 teaspoons active dry yeast
1 cup warm water (110°F/45°C)
1 teaspoon sugar
2 1/2 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
For the Filling:
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup cooked sausage or pepperoni slices
1/2 cup chopped spinach (optional)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste
For the Topping:

1 egg, beaten (for egg wash)
1/4 cup grated Parmesan cheese
Marinara sauce (for serving)
Instructions:

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.
In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
In a medium bowl, mix together the ricotta, mozzarella, and Parmesan cheeses. Add the cooked sausage or pepperoni, chopped spinach (if using), oregano, basil, salt, and pepper. Mix until well combined.
Punch down the risen dough and divide it into 4 equal portions. Roll each portion into a circle about 1/4 inch thick.
Spoon the filling onto one half of each dough circle, leaving a border around the edge. Fold the dough over the filling to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges.
Place the calzones on the prepared baking sheet. Brush the tops with the beaten egg and sprinkle with grated Parmesan cheese.
Bake in the preheated oven for 15-20 minutes, or until the calzones are golden brown.
Serve hot with marinara sauce on the side.
