Strawberry Tiramisu
Creamy Strawberry Tiramisu with Fresh Berries
Ingredients:
For the Mascarpone Cream:
3 large egg yolks
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup mascarpone cheese
1 cup heavy cream, chilled
For the Strawberry Layer:

2 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
2 tablespoons lemon juice
For the Ladyfingers:
1 package (about 24) ladyfinger cookies
1/2 cup strawberry juice or strawberry liqueur
For Topping:
Fresh strawberries for garnish
Powdered sugar for dusting
Directions:
Prepare the Mascarpone Cream:

In a large mixing bowl, whisk the egg yolks and sugar together until pale and creamy.
Add the vanilla extract and mascarpone cheese, whisking until smooth and well combined.
In a separate chilled bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
Prepare the Strawberry Layer:
In a medium bowl, toss the sliced strawberries with sugar and lemon juice. Let them sit for 15 minutes to release their juices.
Assemble the Tiramisu:
Dip each ladyfinger briefly into the strawberry juice or liqueur, ensuring they are moist but not soggy.
Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
Spread half of the mascarpone cream over the ladyfingers.
Add a layer of the macerated strawberries over the cream.
Repeat with another layer of soaked ladyfingers, followed by the remaining mascarpone cream.
Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
Garnish and Serve:
Before serving, garnish the tiramisu with fresh strawberries and a light dusting of powdered sugar.
