Vanilla Velvet Cake

Vanilla Velvet Cake
2 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups granulated sugar
½ cup unsalted butter, room temperature
½ cup vegetable oil
4 large eggs
1 tablespoon vanilla extract
1 cup buttermilk, room temperature
For the Vanilla Buttercream Frosting:

1 cup unsalted butter, room temperature
4 cups powdered sugar
¼ cup heavy cream
1 tablespoon vanilla extract
Pinch of salt
Instructions:
Prepare the Cake Layers:

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper.
Mix Dry Ingredients:
In a medium bowl, sift together the cake flour, baking powder, baking soda, and salt. Set aside.
Cream the Butter and Sugar:
In a large mixing bowl, beat the butter and sugar together on medium speed until light and fluffy, about 3-4 minutes. Add the vegetable oil and continue to beat until well combined.
Add Eggs and Vanilla:
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Incorporate the Dry Ingredients and Buttermilk:
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing on low speed until just combined.
Bake the Cake:
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Prepare the Frosting:
In a large mixing bowl, beat the butter on medium speed until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the heavy cream, vanilla extract, and a pinch of salt. Beat on high speed until the frosting is light and fluffy.
Assemble the Cake:
Once the cake layers have cooled, place one layer on a serving plate or cake stand. Spread an even layer of frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
Serve:
Decorate the cake as desired. Slice and enjoy!
Enjoy: This Vanilla Velvet Cake is a tender, moist, and fluffy cake with a rich vanilla flavor. It’s perfect for birthdays, special occasions, or just because you’re in the mood for a classic, homemade treat.
