Creamy Key Lime Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 ounces cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tablespoon lime zest
1/2 cup key lime juice
1 teaspoon vanilla extract
Whipped cream, for garnish
Lime slices, for garnish
Directions:
Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan.
In a separate bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the lime zest, key lime juice, and vanilla extract until well combined.
Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula.
Bake in the preheated oven for 45-50 minutes, or until the edges are set but the center still jiggles slightly.
Turn off the oven and leave the cheesecake inside with the door closed for 1 hour.
Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours, preferably overnight.
Garnish with whipped cream and lime slices before serving.
