*Fluffy Pancakes**
**Ingredients**:
– 1 1/2 cups all-purpose flour
– 3 1/2 tsp baking powder
– 1 tsp salt
– 1 tbsp sugar
– 1 1/4 cups milk
– 1 egg
– 3 tbsp melted butter
– 1 tsp vanilla extract
**Directions**:
1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Heat a lightly oiled griddle or frying pan over medium-high heat.
5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
6. Cook until bubbles form on the surface and the edges are dry, about 2-3 minutes. Flip and cook until browned on the other side, about 2 more minutes.
7. Serve hot with butter and syrup.
