Bologna, Egg, and Cheese Sandwiches for Saturday Breakfast
Ingredients:
– 4 slices of bologna
– 4 large eggs
– 4 slices of American cheese
– 4 sandwich buns or slices of bread
– 2 tbsp butter
– Salt and pepper to taste
– Optional: hot sauce or ketchup for serving
Directions:
1. Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, add the bologna slices. Cook for 2-3 minutes on each side until they are slightly browned. Remove from the skillet and set aside.
2. In the same skillet, melt the remaining tablespoon of butter. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Flip the eggs and cook for an additional 30 seconds for over-easy, or longer if you prefer your yolks fully cooked.
3. While the eggs are cooking, toast the sandwich buns or bread slices.
4. To assemble the sandwiches, place one slice of bologna on the bottom half of each bun. Top with a fried egg, a slice of cheese, and the top half of the bun. Allow the cheese to melt slightly from the warmth of the egg.
5. Serve hot with optional hot sauce or ketchup on the side.
