Elegant White Chocolate Blueberry Swirl Cheesecake

Ingredients:
For the Crust:
1 1/2 cups Oreo cookie crumbs 
1/4 cup unsalted butter, melted 
For the Cheesecake Filling:
24 oz cream cheese, softened 
1 cup granulated sugar 
1 teaspoon vanilla extract 
4 large eggs 
1 cup sour cream 🥛


8 oz white chocolate, melted 
1/2 cup blueberry puree (fresh or frozen blueberries blended until smooth) 
For the Topping:

Fresh blueberries 
Whipped cream 
Blueberry sauce (optional) 
Instructions:
Prepare the Crust:

Preheat the oven to 325°F (163°C). 
In a medium bowl, combine Oreo cookie crumbs and melted butter. 
Press the mixture firmly into the bottom of a 9-inch springform pan. 
Bake for 10 minutes, then set aside to cool. ⏲️
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth. 
Gradually add granulated sugar and vanilla extract, mixing until well combined.
Add eggs one at a time, beating on low speed after each addition until just blended. 
Mix in sour cream and melted white chocolate until smooth and creamy. 
Create the Swirl:
Pour half of the cheesecake filling over the prepared crust. 
Drop spoonfuls of blueberry puree onto the filling, then use a knife or skewer to swirl the puree into the filling. 
Pour the remaining cheesecake filling on top, and repeat the process with the remaining blueberry puree for a beautiful swirl effect. 
Bake the Cheesecake:
Place the springform pan in a large roasting pan, and fill the roasting pan with hot water to reach halfway up the sides of the springform pan. 
Bake the cheesecake for 50-60 minutes, or until the center is set but still slightly jiggly. 
Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour. 
Remove the cheesecake from the oven and water bath, and let it cool completely on a wire rack. Refrigerate for at least 4 hours, or overnight. 
Add the Topping:
Before serving, top the cheesecake with fresh blueberries, dollops of whipped cream, and a drizzle of blueberry sauce if desired.
