These Broccoli Cheddar Chicken Rollups are a delicious, family-friendly meal that combines tender chicken, fresh broccoli, and melted cheddar cheese, all rolled up in a flaky crescent dough. Perfect for weeknight dinners or a special weekend treat!
Ingredients:
2 cups cooked chicken breast, shredded
1 cup steamed broccoli florets, chopped
1 cup cheddar cheese, shredded
1/4 cup mayonnaise (or Greek yogurt for a lighter option)
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 tube crescent roll dough (8 rolls)
2 tablespoons butter, melted
1/4 cup Parmesan cheese, grated (optional)
Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat Oven:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
2. Prepare the Filling:
In a large mixing bowl, combine the shredded chicken, chopped broccoli, cheddar cheese, mayonnaise (or Greek yogurt), garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
3. Assemble the Rollups:
Unroll the crescent roll dough and separate it into 8 triangles.
Place a generous spoonful of the chicken and broccoli mixture on the wider end of each triangle.
Roll up each triangle, starting from the wider end and rolling towards the point, encasing the filling inside. Place the rollups on the prepared baking sheet, making sure the point side is down to prevent them from unrolling.
