Taco Meatloaf (Mexican Meatloaf)
Ingredients:
– 1 pound ground beef
– 1 pound ground pork
– 1 packet taco seasoning mix
– 1 cup crushed tortilla chips
– 1 cup shredded cheddar cheese
– 1/2 cup salsa
– 2 eggs, beaten
– 1/2 cup onion, finely chopped
– 1/2 cup green bell pepper, finely chopped
– 1/4 cup chopped fresh cilantro
– 1/2 teaspoon garlic powder
– 1/2 teaspoon cumin
– 1/4 teaspoon black pepper
Topping:
– 1/2 cup salsa
– 1/2 cup shredded cheddar cheese
– Chopped fresh cilantro (for garnish)
Directions:
1. Preheat oven to 375°F (190°C). Grease a 9×5-inch loaf pan.
2. In a large bowl, combine the ground beef, ground pork, taco seasoning mix, crushed tortilla chips, shredded cheddar cheese, salsa, beaten eggs, finely chopped onion, finely chopped green bell pepper, chopped fresh cilantro, garlic powder, cumin, and black pepper. Mix until well combined.
3. Press the meat mixture into the prepared loaf pan, forming an even layer.
4. Spread the 1/2 cup of salsa over the top of the meatloaf.
5. Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
6. During the last 10 minutes of baking, sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the meatloaf.
7. Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped fresh cilantro before serving.
