Philly Cheesesteak Baked Potato

Ingredients:
– 4 large russet potatoes
– 1 tablespoon olive oil
– 1 onion, sliced
– 1 green bell pepper, sliced
– 1/2 pound thinly sliced roast beef
– 1 cup shredded provolone cheese
– Salt and pepper to taste
– 1/2 cup sour cream
– 2 tablespoons chopped fresh parsley
Directions:

1. Preheat oven to 400°F (200°C).
2. Scrub potatoes, poke several holes in each with a fork, and bake for 45-60 minutes until tender.
3. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened, about 5-7 minutes.
4. Add roast beef to the skillet, cooking until heated through, about 2-3 minutes.
5. Once potatoes are done, slice them open and fluff the insides with a fork.
6. Divide the beef mixture among the potatoes, then top with shredded cheese.
7. Place the stuffed potatoes back in the oven for 5-10 minutes, until the cheese is melted.
8. Garnish with sour cream and parsley before serving.
