Easy Chicken Burritos
Ingredients:
1 lb cooked chicken, shredded
1 packet taco seasoning mix
1/4 cup water
1/2 cup salsa
1/2 cup canned black beans, drained and rinsed
1/2 cup canned corn, drained
1/2 cup shredded cheddar cheese
4 large flour tortillas
1/4 cup sour cream
1/4 cup guacamole
Fresh cilantro, for garnish
Directions:
In a large skillet, heat the shredded chicken over medium heat. Add the taco seasoning mix and water, stirring to coat the chicken evenly. Cook for 5-7 minutes until the chicken is heated through and the sauce has thickened.
Add the salsa, black beans, and corn to the skillet. Stir to combine and cook for another 3-5 minutes until everything is heated through.
Warm the flour tortillas in a dry skillet or microwave. Divide the chicken mixture evenly among the tortillas, placing it in the center of each one.
Sprinkle shredded cheddar cheese on top of the chicken mixture in each tortilla.
Roll up the tortillas, folding in the sides first, then rolling from the bottom to create burritos.
Serve the burritos with sour cream and guacamole on the side. Garnish with fresh cilantro if desired.
