Pavlova
Classic Pavlova with Fresh Berries and Whipped Cream
Ingredients:
For the Pavlova:
4 large egg whites, at room temperature
1 cup granulated sugar
1 teaspoon white vinegar
1 teaspoon cornstarch
1 teaspoon vanilla extract
For the Toppings:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Fresh berries (strawberries, raspberries, blueberries)
Fresh mint leaves for garnish (optional)
Directions:
Prepare the Pavlova:

Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper and draw an 8-inch circle on the paper as a guide. Flip the parchment over so the drawn circle is on the underside.
In a large, clean mixing bowl, beat the egg whites on medium speed until soft peaks form.
Gradually add the sugar, one tablespoon at a time, beating well after each addition. Continue beating until stiff, glossy peaks form and the sugar is fully dissolved.
Add the white vinegar, cornstarch, and vanilla extract, and gently fold them into the meringue mixture until combined.
Spoon the meringue onto the prepared parchment paper, spreading it within the circle and creating a slight indentation in the center to hold the toppings.
Place the pavlova in the oven, and immediately reduce the temperature to 250°F (120°C). Bake for 1 hour and 15 minutes, or until the pavlova is crisp and dry on the outside.
Turn off the oven and let the pavlova cool completely inside the oven with the door slightly ajar. This helps prevent cracking.
Prepare the Whipped Cream:
In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
Keep the whipped cream refrigerated until ready to use.
Assemble the Pavlova:
Carefully transfer the cooled pavlova to a serving platter.
Spoon the whipped cream into the center of the pavlova.
Top with fresh berries and garnish with mint leaves if desired.
Serve:
Slice the pavlova and serve immediately to enjoy the crisp outer shell and soft, marshmallow-like center.
