Fresh Peach Cake
Moist and Tender Cake with Juicy Peach Slices
Ingredients:
1 and 3/4 cups (220g) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (115g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
1/4 cup (50g) packed light brown sugar
2 large eggs, room temperature
1/3 cup (80g) sour cream, room temperature
1 teaspoon vanilla extract
1/4 cup (60ml) milk, room temperature
3-4 large peaches, peeled and thinly sliced (about 2 cups)
1 tablespoon granulated sugar, for topping
Directions:
Prepare the Cake Batter:
Preheat your oven to 350°F (177°C). Grease and lightly flour a 9-inch springform pan or use non-stick spray.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
In a large bowl, using a handheld or stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and brown sugar together on high speed until creamy and smooth, about 2 minutes.
Add the eggs, one at a time, beating well after each addition. Add the sour cream and vanilla extract, and beat until combined.
With the mixer on low speed, add the dry ingredients in three additions, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Assemble the Cake:
Pour the batter into the prepared pan and smooth the top with a spatula.
Arrange the peach slices on top of the batter, pressing them down slightly. Sprinkle 1 tablespoon of granulated sugar over the peaches.
Bake the Cake:
Bake the cake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, run a knife around the edges and remove the sides of the springform pan.
Let the cake cool completely before slicing and serving.
Serve:
This cake is delicious on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
