No-bake Peach Raspberry Cheesecake
Just made this amazing Peach Raspberry Cheesecake – a no-bake treat that’s perfect for summer!
Ingredients:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
3 cups cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 1/2 cups heavy cream
2 cups fresh peaches, sliced
1 cup fresh raspberries
1/4 cup raspberry preserves
Whipped cream for garnish
Directions:
In a medium bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix until combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.
Pour half of the cream cheese mixture over the prepared crust. Arrange half of the peach slices and raspberries over the filling.
Add the remaining cream cheese mixture on top of the fruit layer. Swirl raspberry preserves through the cheesecake filling with a knife to create a marbled effect.
Top with remaining peach slices and raspberries. Refrigerate for at least 4 hours, or until set.
Before serving, garnish with whipped cream and extra peach slices and raspberries.
