Savory Hand Pies
Flaky and Delicious Savory Hand Pies with a Variety of Fillings
Ingredients:
For the Dough:
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup (2 sticks) unsalted butter, chilled and cubed
1/2 cup ice water
For the Filling:
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1/2 pound ground beef or chicken
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/2 cup grated cheddar cheese (optional)
1 egg, beaten (for egg wash)
Directions:
Make the Dough:

In a large mixing bowl, whisk together the flour and salt. Add the chilled, cubed butter, and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Filling:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute. Add the ground beef or chicken, salt, pepper, smoked paprika, thyme, and oregano. Cook, breaking up the meat with a spoon, until the meat is browned and cooked through. Remove from heat and let cool slightly. If using, stir in the grated cheddar cheese.
Assemble the Hand Pies:
Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out one of the dough disks to about 1/8-inch thickness. Use a round cutter or the rim of a glass to cut out circles of dough. Place a spoonful of the filling in the center of each circle. Fold the dough over the filling to form a half-moon shape and press the edges together with a fork to seal. Repeat with the remaining dough and filling.
Bake the Hand Pies:
Place the hand pies on a parchment-lined baking sheet. Brush the tops with the beaten egg for a golden finish. Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown and crispy. Let cool slightly before serving.
