Easy Slow Cooker Beef & Broccoli
Ingredients:
– 1 1/2 lbs flank steak, thinly sliced
– 4 cups broccoli florets
– 3/4 cup beef broth
– 1/2 cup low-sodium soy sauce
– 1/3 cup brown sugar
– 2 tablespoons sesame oil
– 3 cloves garlic, minced
– 1 tablespoon cornstarch
– 1 tablespoon water
– Cooked rice for serving
– Sesame seeds and sliced green onions for garnish (optional)
Directions:
1. Place the sliced flank steak in the slow cooker.
2. In a bowl, mix together the beef broth, soy sauce, brown sugar, sesame oil, and minced garlic. Pour over the beef in the slow cooker.
3. Cover and cook on low for 5-6 hours, or until the beef is tender.
4. About 30 minutes before serving, mix the cornstarch and water together in a small bowl to create a slurry. Stir the slurry into the slow cooker.
5. Add the broccoli florets to the slow cooker. Cover and cook for an additional 30 minutes, or until the broccoli is tender and the sauce has thickened.
6. Serve the beef and broccoli over cooked rice. Garnish with sesame seeds and sliced green onions if desired.
