Apple Pecan Feta Salad
Ingredients:
– 4 cups mixed greens (such as arugula, spinach, and lettuce)
– 2 medium apples, thinly sliced
– 1/2 cup pecans, toasted
– 1/2 cup crumbled feta cheese
– 1/4 cup dried cranberries
– 1/4 red onion, thinly sliced
For the Dressing:
– 1/4 cup olive oil
– 2 tablespoons apple cider vinegar
– 1 tablespoon honey
– 1 teaspoon Dijon mustard
– Salt and pepper to taste
Directions:
1. In a large salad bowl, combine the mixed greens, apple slices, toasted pecans, crumbled feta cheese, dried cranberries, and red onion slices.
2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
3. Pour the dressing over the salad and toss gently to combine.
