Luscious Red Velvet Strawberry Indulgence Recipe
Ingredients:
Cake:
2 ½ cups all-purpose flour
1 ½ cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 ½ cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
2 teaspoons vanilla extract
Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks unsalted butter, softened
1 teaspoon vanilla extract
4 cups powdered sugar, sifted
Strawberry Topping:
1 pint fresh strawberries, sliced
Optional: strawberry sauce for drizzling
Instructions:
Prepare the Cake:
Preheat oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
In another bowl, whisk together oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
Combine wet and dry ingredients, mixing until smooth.
Divide batter evenly between the pans and bake for 25-30 minutes. Let cool completely.
Make the Frosting:
In a large bowl, beat cream cheese, butter, and vanilla until smooth.
Gradually add powdered sugar, beating until fluffy.
Assemble the Cake:
Place one cake layer on a serving plate.
Spread a thick layer of cream cheese frosting and add a layer of sliced strawberries.
Top with the second cake layer and frost the entire cake.
Decorate with more sliced strawberries on top and drizzle with strawberry sauce if desired
