Chocolate Dipped Madeleines
Ingredients:
2 Large eggs
125g White sugar
1 tsp Vanilla extract
Pinch of salt
120g All-purpose flour
1 ¾ tsp Baking powder
135g Unsalted butter
200g Melted dark chocolate (compound or tempered couverture)
Instructions:
Brown the butter in a saucepan, then cool.
Whisk eggs, sugar, and vanilla. Sift in flour, baking powder, and salt, then mix.
Add cooled butter, mix, cover, and chill overnight.
Grease and freeze the madeleine tray. Preheat oven to 220°C.
Pipe batter into the tray and bake for 5 minutes. Reduce temperature to 180°C and bake for 7 more minutes.
For coating, fill tray halfway with chocolate, press madeleines in, set at room temperature for 30 minutes, then freeze for 15 minutes.
