Healthy Chicken Burritos
Ingredients:
2 boneless, skinless chicken breasts, sliced into strips
1 tbsp olive oil
1 onion, finely chopped
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder (adjust to taste)
Salt and pepper, to taste
4 large whole wheat tortillas
1 avocado, sliced
100g Greek yogurt
100g grated cheddar cheese
Fresh cilantro, chopped, for garnish
Lime wedges, for serving
Instructions:
Heat olive oil in a large pan over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove chicken from pan and set aside.
In the same pan, add chopped onion and sliced bell peppers. Cook until softened, about 5 minutes.
Add ground cumin, smoked paprika, chili powder, salt, and pepper to the vegetables. Stir to combine and cook for another 2 minutes.
Return cooked chicken to the pan and toss everything together until well combined and heated through.
Warm the tortillas according to package instructions or preference.
To assemble the burritos, spread Greek yogurt on each tortilla. Top with a portion of the chicken and vegetable mixture, avocado slices, grated cheddar cheese, and chopped cilantro.
Roll up the burritos tightly, folding in the sides as you go.
Serve the burritos with lime wedges on the side for squeezing over.
