3/4 cup granulated sugar
1 tsp vanilla extract
1/2 cup all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
Powdered sugar for dusting
For the Filling:
1 1/2 cups heavy cream
3 tbsp powdered sugar
1 tsp vanilla extract
1 can (21 oz) cherry pie filling
For Garnish:
Additional whipped cream
Chocolate shavings or curls
Fresh cherries
Instructions:
Make the Chocolate Cake:
Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, beat the eggs, granulated sugar, and vanilla extract together until pale and fluffy.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
Gradually fold the dry ingredients into the egg mixture until well combined.
Pour the batter into the prepared jelly roll pan and spread it evenly with a spatula.
Bake for 12-15 minutes, or until the cake springs back when lightly touched.
While the cake is baking, lay out a clean kitchen towel and sprinkle it generously with powdered sugar.
Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
Starting from the short end, gently roll the cake up with the towel inside. Place it seam side down on a wire rack to cool completely.
Prepare the Filling:
In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Roll Cake:
Carefully unroll the cooled cake from the towel.
Spread the whipped cream evenly over the surface of the cake, leaving a small border around the edges.
Spoon the cherry pie filling evenly over the whipped cream layer.
Roll the Cake:
Starting from the short end, gently roll the cake back up, without the towel this time.
Place the roll seam side down on a serving platter.
Garnish and Serve:
Garnish the top of the roll cake with additional whipped cream, chocolate shavings or curls, and fresh cherries.
Dust with powdered sugar if desired.
Chill the Black Forest Roll Cake in the refrigerator for at least 1 hour before slicing and serving.
