Vegan Pizza with Easy Homemade Mozzarella
Ingredients:
batch of pizza dough (store-bought or homemade)
1 cup cashews, soaked in hot water for 1 hour
1/4 cup nutritional yeast
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 1/4 cups water
1/4 cup tapioca starch
1/4 cup tomato sauce
Your choice of pizza toppings (e.g., vegetables, olives, herbs)
Instructions:
Preheat your oven to 475°F (245°C).
Roll out the pizza dough on a lightly floured surface into your desired shape and thickness.
In a blender, combine soaked cashews (drained), nutritional yeast, lemon juice, salt, garlic powder, onion powder, water, and tapioca starch. Blend until smooth.
Transfer the mixture to a saucepan over medium heat. Stir constantly until the mixture thickens and becomes stretchy like cheese, about 5-7 minutes.
Spread tomato sauce evenly over the rolled-out pizza dough.
Spoon dollops of the homemade mozzarella mixture over the sauce.
Add your favorite toppings.
Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
Remove from the oven, slice, and serve hot.
