Strawberry Velvet Cake
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 cup unsalted butter, softened
1 cup milk
1/2 cup strawberry puree
3 large eggs
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
Red food coloring (optional, for a deeper color)
For the Strawberry Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1/4 cup strawberry puree
1 tsp vanilla extract
Instructions:
Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract and strawberry puree.
Gradually add the flour mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
If desired, add a few drops of red food coloring to achieve a deeper pink color.
Divide the batter evenly between the prepared cake pans.
Bake the Cake:
Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare the Frosting:
In a large bowl, beat the cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, mixing until well combined.
Mix in the strawberry puree and vanilla extract until the frosting is smooth.
Assemble and Frost the Cake:
Place one cake layer on a serving plate and spread a layer of frosting on top.
Place the second cake layer on top of the frosting and frost the top and sides of the cake with the remaining strawberry cream cheese frosting.
