Strawberry Cheesecake Tacos
Ingredients:
6 small flour tortillas
1 cup granulated sugar, divided
1 teaspoon cinnamon
1/2 cup melted butter
1 cup cream cheese, softened
1 teaspoon vanilla extract
1 cup heavy cream, whipped
1 cup fresh strawberries, diced
1/4 cup strawberry jam
Directions:
Preheat oven to 400°F (200°C).
Cut tortillas into smaller circles using a round cutter. Combine 1/2 cup sugar with cinnamon. Brush both sides of tortilla circles with melted butter, then sprinkle with cinnamon sugar.
Invert a muffin tin and place tortillas between the cups to form a taco shape. Bake for 6-8 minutes until crispy.
In a bowl, beat cream cheese, the remaining sugar, and vanilla extract until smooth. Fold in whipped cream.
Fill each taco shell with the cream cheese mixture, top with diced strawberries and a dollop of strawberry jam.
Chill for at least 1 hour before serving to set the filling.
