Lime Mousse Cheesecake 
his Lime Mousse Cheesecake is a creamy, zesty dessert that perfectly balances the richness of cheesecake with the light, refreshing flavor of lime mousse!  It’s the ideal dessert for spring and summer gatherings or when you’re craving something citrusy and sweet. 
 Ingredients:
For the crust:
• 1 ½ cups graham cracker crumbs
• ¼ cup granulated sugar
• ½ cup unsalted butter, melted
For the cheesecake filling:
• 16 oz cream cheese, softened
• ½ cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• 1 tbsp lime zest
• 2 tbsp lime juice
For the lime mousse:
• 1 cup heavy cream, chilled
• ¼ cup powdered sugar
• 2 tbsp lime juice
• 1 tbsp lime zest
For garnish:
• Extra lime zest
• Whipped cream (optional)
 Directions:

1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
2. Make the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the springform pan to form an even layer. Bake for 8-10 minutes, then set aside to cool.
3. Prepare the cheesecake filling: In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lime zest, and lime juice until fully combined.
4. Bake the cheesecake: Pour the cheesecake filling over the cooled crust and smooth the top. Bake for 40-45 minutes, or until the center is just set. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
5. Make the lime mousse: In a chilled bowl, whip the heavy cream with the powdered sugar until soft peaks form. Gently fold in the lime juice and lime zest.
6. Top the cheesecake: Once the cheesecake is fully chilled, spread the lime mousse evenly over the top.
7. Garnish: Top with extra lime zest and a dollop of whipped cream, if desired.
8. Serve: Slice and enjoy this refreshing, creamy dessert!
